Mexican Bowl with Pita Chips

2 pieces MEB Pita Pocket White

1 cup of corn kernels

1 avocado

1/2 capsicum sliced

1 cup red beans

1 cup cooked brown rice

2 tbsp sour cream

chilli sauce (optional)

flat leaf parsley to garnish

  1. Lay the pieces of pita on a tray and grill for 5 minutes or until crispy. Once cooled, snap the pita in large pieces.
  2. In a bowl, start layering the ingredients keeping each ingredient separate. Ensure you split the ingredients evenly across the 2 bowls.
  3. Top the ingredients with sour cream, chilli and the parsley leaves.
  4. Optional – Try adding some cooked chicken or mince beef to the bowl for some more flavour!
